Low Carb Hail Merry Lemon Tart Recipe

hail merry lemon tart low carb dairy free

I didn't even know what a Hail Merry tart was until I was researching a dairy free dessert to make for my daughter, who cannot tolerate gluten, dairy or eggs. Apparently these tarts are sold in stores in individual servings, but are sweetened with honey. Well I also wanted to be able to eat this dessert along with my daughter, so here is a version that is paleo, keto, vegan, low carb, gluten free, dairy free, egg free, contains no soy and most important of all, is completely delicious!

Toasted Vanilla Coconut – Watch Out It’s Addictive!!

toasted vanilla coconut

You're going to LOVE this snack, and it's low carb too (and very filling)!

I toasted these coconut flakes with some real vanilla and a touch of low carb sweetener, and now have a wonderful snack that will satisfy your sweet tooth, give you some fiber and some good fats, all-in-one little package! They make a great topping for plain yogurt too, and a good addition to any paleo “cereal” mix you like.

Easy 2 Ingredient Keto Chocolate Mousse

chocolate mousse - final with text

I got the idea to “keto-ize” this super easy chocolate mousse from a recipe that I saw linked from the Lifehacker site. This is a great dessert for a ketogenic diet because it stretches 1 stevia sweetened chocolate bar into 3 really nice sized satisfying servings. Also you don't really need any additional sweetener, although you could add more if you wanted to. Sometimes, simpler can be better! I made this recipe as-is and the result was fabulous, barely sweet with my favorite brand of stevia sweetened chocolate. The fina sugar free dessert is both dense and fluffy, which is a very pleasing combination!

Best yet, this dessert is only 4.5 net grams of carbs per serving, which are from the sugar alcohols. I eat 1/3 of this recipe at a time and it does not kick me out of ketosis. Try it with some marcona almond slivers and celtic sea salt sprinkled on the final product, it's amazing!

How to Make Coconut Oil Candy ‘Fat Bombs’

Coconut Fat Bomb Candies

These coconut oil ‘candies' or ‘fat bombs' as some people call them, are incredibly useful for evening sugar cravings. They can be made extremely low carb with your alternative sweetener of choice (I prefer xylitol/stevia mix for these), and they are great to have in the fridge for when you are in the throes of a craving, or just great as an evening snack. It's hard to explain but these seem to satisfy something in my body and I can just feel myself going ‘ahhhhhh… I'm better now'. Maybe it's the combination of the cocoa powder and coconut flakes together working it's magic. Whatever it is, I'll take it!
