In this recipe, I reduce the carb count a little more by replacing the carby water chestnuts with a lower carb green onion. For you low carbers or keto folks, it's a great recipe to get your greens in and spinach is so low carb compared to other veggies.
This is a great recipe because the higher fat filling balances out the low fat of chicken breasts and makes them suitable even for a low carb ketogenic diet. Our whole family loves this recipe. We have even made the cheese/basil stuffing and topped tilapia fish fillets with it.
