How to Make Perfect Cauliflower Rice

Cooked cauliflower rice is my ‘go to' for curries, side dishes and even the base for pizza. But it is just great on it's own with no other ingredients than salt and pepper!

Cauliflower rice has saved my life on my paleo keto low carb diet. You wouldn't think that such a small substitute would make such a difference, but it makes me feel almost normal! Here is my method… note that sometimes I like a drier rice if I'm using it in another recipe that doesn't take well to extra wetness. So I do squeeze out some of the excess water. Make sure to let the rice cool a bit and do this over the sink, as more water comes out of it than you think!

If I make this as a side dish, I love to use grass-fed butter and some freshly ground whole nutmeg… YUM. By the way, this nutmeg grinder is the BEST one I've found, and it stores your nutmeg for you.

Instructions
  1. Grate the cauliflower in a box grater or food processor with grater attachment. Don't worry if it's not absolutely perfect.
  2. Microwave method: put cauliflower in a medium bowl and cook for 8 minutes. Stovetop method: heat 2 tablespoons olive oil, coconut oil or butter then put in cauliflower and reduce heat to medium and put a lid on the pot. Cook for about 10 minutes.
  3. Salt and pepper to taste
  4. If you prefer a 'drier' cauliflower rice - after cooking, put the rice in a clean cotton kitchen towel / napkin (flat weave). Squeeze out some excess water. Put cauliflower back in bowl and fluff with a fork.
