Low Carb Sub Sandwich “Unwich”



This really easy sub “sandwich” is super easy to make, and I was surprised at how good it was. I didn't really miss the bread at all!

Lettuce wrapped sandwiches (the “unwich”) are easier to make than I thought, and actually highly satisfying. Here's a picture of the one I did ‘deconstructed'… I just put all three of these layers together wrapped up:

This easy to make low carb, keto 'sandwich' will satisfy your cravings and you'll barely miss the bread!
  • 2 romaine lettuce leaves
  • 4-6 ounces sliced roast beef
  • 2 ounces swiss cheese, sliced
  • 1 Tablespoon mayonnaise, divided
  • black pepper & spritz of vinegar
  1. Lay out the romaine lettuce leaves on a plate, spread each with half the mayo. Sprinkle on black pepper and vinegar.
  2. Lay the meat and cheese on each leaf.
  3. Put the two halves together and wrap up with a paper towel, eat immediately.

I love this way of making “sandwiches”. A variation is to use chicken with Caesar dressing instead of mayo!

Or eliminate the cheese (for those of us who can’t handle the dairy) and add an avocado or some BACON! 🙂

Doing Atkins so what would is the Fiber and carb count for this meal, because really looks good!!
