Low Carb Stuffed Chicken Breast
These wonderful stuffed chicken breasts have only a few ingredients but they work together well. This dinner is fancy enough for a dinner party or a weeknight dinner. Be sure to use a good quality parmesan cheese. If you don't have access to fresh basil use your favorite fresh or dried herb, or the tubes of chopped herb in the grocery store.

  1. Combine all ingredients except the chicken and heat gently in a bowl, stirring often until combined evenly.
  2. While cheese mixture is heating, cut a pocket for the filling into the thick side of each chicken breast
  3. Set aside about ¼ cup of the cheese filling. Stuff the chicken breasts with the rest of the cheese filling. Insert two toothpicks in each chicken breast to seal it and keep the filling inside.
  4. Heat the olive oil in a frying pan until hot and cook the chicken 5 minutes on each side, browning them.
  5. Take the reserved cheese filling and put 1 Tablespoon on top of each chicken breast. Cover the frying pan with a lid and let the cheese filling melt on the chicken. You could also broil the pan of chicken in the oven for 2 minutes if you prefer.
