This is a great recipe because the higher fat filling balances out the low fat of chicken breasts and makes them suitable even for a low carb ketogenic diet. Our whole family loves this recipe. We have even made the cheese/basil stuffing and topped tilapia fish fillets with it.

Instructions
  1. Combine all ingredients except the chicken and heat gently in a bowl, stirring often until combined evenly.
  2. While cheese mixture is heating, cut a pocket for the filling into the thick side of each chicken breast
  3. Set aside about ¼ cup of the cheese filling. Stuff the chicken breasts with the rest of the cheese filling. Insert two toothpicks in each chicken breast to seal it and keep the filling inside.
  4. Heat the olive oil in a frying pan until hot and cook the chicken 5 minutes on each side, browning them.
  5. Take the reserved cheese filling and put 1 Tablespoon on top of each chicken breast. Cover the frying pan with a lid and let the cheese filling melt on the chicken.
