You're going to LOVE this snack, and it's low carb too (and very filling)!
I toasted these coconut flakes with some real vanilla and a touch of low carb sweetener, and now have a wonderful snack that will satisfy your sweet tooth, give you some fiber and some good fats, all-in-one little package! They make a great topping for plain yogurt too, and a good addition to any paleo “cereal” mix you like.
I love coconut milk SO. MUCH. I also live in berry country (Pacific Northwest), and practically live in the middle of a berry farm. Combine these two, freeze them, and you have a wonderful sweet (but not too sweet), low carb and satisfying dessert for hot summer nights!
I love Thai food. So. MUCH. So when I saw this recipe in the Eat Fat Lose Fat book by Sally Fallon and Mary Enig., I jumped at it! An easy soup with Thai flavors that takes less than a half hour to prepare and cook? And, it tastes like something you would get in a good Thai restaurant? I'm all for it! It also fits very well into Paleo/Primal, Keto (ketogenic) or even a Whole30 plan
I love curry. SO. MUCH. It's actually ridiculous how much I love it. And once I learned how easy it was to make at home, I rarely even order it in restaurants. My daughter is also addicted and could eat this curry every day if I made it that often, which I could if I wanted to because its so ridiculously easy.
