The other night I had a bunch of pizza toppings available, but I was too tired and hungry to make any of my wonderful low carb pizza crusts. So I just made a crustless version of pizza for a very quick yet satisfying dinner! You could even take this to work for lunch pretty easily…

This has to be one of the quickest and easiest and most satisfying dinners ever. You get the taste of pizza, with hardly any work! This takes less than 10 minutes to assemble and heat up. Save this idea for those really tough work nights when you are tempted to eat out, but then DON'T and just make this!

  1. Layer the toppings in an oven safe bowl. I layered in this order: mushrooms, sausage, pepperoni, sauce. Top with the two cheeses and sprinkle with Italian seasoning.
  2. Heat in the toaster oven until cheese is bubbly.
  3. Enjoy!
