Bacon Topped Deviled Eggs

Ingredients
  • 6 eggs
  • 2-3 Tablespoons mayonnaise mayonnaise
  • 1 teaspoon mustard
  • 6 pieces bacon, cooked and chopped
  • smoked paprika for sprinkling
  • salt & pepper
  • optional - drizzle of 1 Tablespoon bacon drippings (or add to egg yolk mixture)
  • optional - chopped green onion (for garnish)
Instructions
  1. Boil eggs, then shell and cut in half lengthwise. Cook and chop the bacon, reserve bacon grease.
  2. Remove all of the yolks from the whites and place in a small bowl, mix with the mayonnaise, mustard, salt & pepper. Taste and adjust seasoning if needed.
  3. Add half of the chopped bacon and mix into the egg yolk mixture. Also add the 1 Tablespoon bacon grease if you want it in the egg yolk mixture.
  4. Fill the egg whites with the yolk mixture.
  5. Top with the rest of the chopped bacon, a sprinkling of smoked paprika & green onions. Drizzle with bacon grease for a punch of flavor.
